I would then import contacts in and couldn't figure out how to import the calendar. ie: I would open up Internet Explorer, log into the user account as jon doe. That will pull all the info from the PST file and place it in O365. Configure Outlook for the O365 account then import the PST.

Just remove the Exchange account (or set up Outlook on a new PC) to avoid any potential confusion. If you want to do a simple, basic, import from PST that's the way to do it.
